Why Milk Sinks Instead of Appearing White in Latte Art

Your milk usually sinks because you are pouring from too high above the coffee. From higher up, the stream has enough force to pass through the crema and mix beneath the surface. That is useful when building the base of the drink, but it hides the white microfoam.

To make the white pattern appear, bring the pitcher spout close to the coffee surface and keep the flow controlled. The microfoam can then spread across the surface instead of being driven underneath it.

The short version

  • Pour higher to mix. Use height at the beginning when you want milk to enter beneath the crema.
  • Move close to draw. Lower the spout when you want white microfoam to appear on the surface.
  • Hold the close position. Give the white shape time to spread.

Why height changes what you see

The same milk can behave differently at two pour heights.

When the spout is higher, the stream enters the cup with more downward momentum. Milk mixes with the coffee, which helps create an even base colour. If you stay high for the entire pour, the white foam can remain below the surface and no clear design appears.

When the spout is close, the stream enters more gently. The lighter microfoam can spread across the top, creating visible white contrast. Getting close does not compensate for badly textured milk, but it lets usable microfoam appear where you can shape it.

How to correct a hidden pour

1. Check the milk before you start

Swirl the pitcher. The milk should look glossy and integrated rather than dry, bubbly or separated. If it is not, fix the steaming stage first with the milk-steaming guide.

2. Begin high enough to build the base

Start with a steady stream above the surface so the milk mixes into the coffee. Do not try to draw the pattern immediately.

3. Lower the spout before the cup is too full

Tilt the cup toward the pitcher and bring the spout close to the surface. If you wait until the cup is almost full, there may not be enough room for the white shape to expand.

4. Keep the flow controlled

Hold the close position long enough for white microfoam to spread. A sudden rush can wash out the shape; a flow that is too weak may not move enough foam into the pattern.

5. Lift and cut through

Once the white shape has formed, raise the pitcher slightly and move the stream through it. This narrows the stream and pulls the shape into a heart.

Troubleshooting: the milk still does not appear

The milk is glossy, but the pattern remains brown

Move the spout closer and make the change earlier. You may still be pouring at mixing height when you expect the drawing phase to begin.

White appears, then disappears

You may be lifting the pitcher too soon, pouring too forcefully, or continuing to mix after the pattern starts. Hold the close position briefly before the cut-through.

A white blob appears without a clean shape

The close position is working, but flow and placement need practice. Keep the cup tilted, aim consistently, and make one simple heart before adding side-to-side movement.

Nothing works even when the spout is close

Recheck the milk. Large bubbles, dry foam or separated liquid cannot create a clean surface pattern simply by changing height. Practise aeration and rotation before repeating the pour.

Does the pitcher matter?

A pitcher affects handling and milk flow, but it does not replace the height change. You can practise this lesson with a suitable milk pitcher you already own.

Practice drill

Pour three simple hearts and change only one thing: when you lower the spout.

  1. On the first cup, notice what happens if you stay high too long.
  2. On the second, lower the spout earlier and hold it close.
  3. On the third, repeat the timing that produced the clearest white circle, then lift and cut through.

The goal is not to make three perfect hearts. It is to see the difference between mixing height and drawing height.
